Coconut Lemon Cake
This COCONUT LEMON CAKE is the perfect cake. It’s exceptionally moist, tender, delicate, and bursting with lemon and coconut flavor.
- Egg White 100g
- Sugar 100g
- Cake Flour 110g
- Lemon Juice 20g
- Unsalted Butter 30g
- paste-Coconut Paste 80g
- In a bowl, mix unsalted butter, paste-Coconut Paste and lemon juice; melt the mixture by using double boiler.
- Beat the egg white until slight foamy, add the sugar and stir evenly until stiff peak.
- Shift the cake flour and mix with step 1 mixture, stir evenly. Pour batter evenly into cake tin.
- Bake 180℃/180℃ for 25 minutes. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean, it’s done.
